Chef Pawel previously worked as the Chef de Cuisine at Three Blue Ducks restaurant at W Brisbane since 2021. Prior to this he was the Chef de Cuisine at hatted restaurant Noosa Beach House, where he worked alongside Peter Kuruvita.
Chef Pawel trained and honed his craft in his home country of Poland before embarking on an international career over the subsequent 15 years working in world class restaurants in Poland, Ireland, Denmark, USA, Cyprus, Fiji and Samoa. Highlights of his career include working alongside René Redzepi at three-Michelin star restaurant Noma in Copenhagen as well as working at Michelin-starred restaurant Sublime in Tokyo.
His time spent working in New York was one of the most diverse culinary scenes he has ever experienced in over 20 years of cooking around the world, perfecting the simplest, classic dishes that everyone loves by adding playful touches to familiar favourites. Grilling incredible, fresh local produce became one of Chef Pawel's favourite techniques to highlight flavours in the most raw and authentic way - a technique which he has used to innovate the new menu and dining experience at The Lex, which will be a New York-style grill at its heart.
